нет, но не потому что он 64-битный, а потому что не использует DirectShow кодеков
плееры из комплекта Windows можно подружить с SVP только если они 32-ух битные

Try plain youtube-dl.exe instead, will it able to download the full audio in all cases?

set tube.verbose=10 in "all settings" before starting a download, it will print ffmpeg's output into SVP's log

я вижу только одну принципиальную разницу - у вас все установлено в юзерскую папку /Users/djinn/apps/homebrew/Cellar/, а у всех остальных - "глобально", в /usr/local/Cellar
может быть отсюда все проблемы, начиная с самой первой но это не точно

можно предложить взять команду из лог файла, и запустить её в терминале
можно еще в конце "-v -v" добавить (два раза -v)
там будет больше написано, чем в лог файле

На работу других приложений macOS - нет, не повлияет. А что и как вы еще используете из программ Homebrew - я не знаю.

Доступными для выбора (выделяются надписи чёрным цветом) показываются только папки, все обычные файлы, и в т.ч. все видеофайлы, недоступны для выбора (надписи - серым цветом).
наверное потому что оно предлагает выбрать не видеофайл, а исполняемый файл mpv
если не может само найти его по стандартному пути

are you sure you're using the latest PMP and mpv versions? there's possible inconsistency between older PMP and latest mpv 0.29.1 and vise versa
turn on verbose logs on both server and PMP, probably they contain some useful hint

OpenCL subsystem is broken for some reason. Probably you had AMD card installed before RTX?
